Happy Thanksgiving (Leftovers)!

I hope everyone had an awesome thanksgiving with your friends/family and those who you are thankful for. I know I did! My roommates and I had a few people over and had our very own semi-homemade feast.

Growing up, my parents weren't very big on American traditions like Thanksgiving feasts -- it usually ended up being a potluck with King egg rolls, chow mein and other random things. Since I moved out on my own, I've decided to make my own traditions for holidays. A new one that I've started is making turkey pot pie the day after Thanksgiving!

Here's the semi-homemade recipe I used -- I think it was quite a success!

Filling:
2 small red potatoes, cubed
16 ounces frozen mixed veggies (carrots, corn, peas, green beans)
1 chopped yellow/golden onion
1 handful of mushrooms
1 teaspoon salt-free chicken seasoning
3 cups of boneless turkey breast, cut into bite size pieces
2 (10-ounce) cans cream of chicken soup (Campbell's)

Topping:
16 ounces refrigerated biscuit dough, thawed in refrigerator (I used Pillsbury biscuit dough)
1 tablespoon butter, melted
3/4 teaspoon black pepper

Directions

  • Preheat oven to 350 degrees.
  • Line a baking sheet with aluminum foil; set aside.
  • In a large bowl, thoroughly combine all ingredients for filling.
  • Transfer to a 2 1/2 quart casserole dish.
  • Cover with foil and place on baking sheet.
  • Bake for 1 1/2 hours.
  • Remove from oven and discard foil. Mixture should be bubbling.
  • Gently stir mixture to evenly distribute heat.
  • Open can of biscuit dough and arrange over top of casserole.
  • Brush tops of biscuits with melted butter and sprinkle with black pepper.
  • Return to oven and continue baking for another 15 to 18 minutes or until biscuits have risen and are golden brown.

Cubing the potatoes!
Cutting up the turkey
I decided to use one fat free version and one great for cooking version =P
Mix it all together!
After all the baking -- it's done!!
It's time to eat! =)
Hope some of you guys will get a chance to try this at home! The only problem I had was that my biscuit dough didn't cook through all the way. Next time, I'd try using Pillsbury Crescent Roll dough instead since it's thinner.

What do you guys usually do with your turkey leftovers? I'd love more ideas!
